[Cafe Rio Chicken Recipe]

sooo i made this recipe a few weeks back.

it is delish!
we decided we arent going to go out for dinner tomorrow (v-day).
because everywhere will be a mad house - so instead i am going to make these bad boys!

i strongly suggest you try them.
SUPER SUPER easy.

here is what we did:

- i just bought regular small tortillas at the store.

- i made some minute rice (white) and put a splash of lime juice and seasoned it with salt and pepper.

- walmart had this green looking salad dressing that looked like cafe rios so i figured what the hell - why not? it isnt the same but it is still good hahaha.

- lettuce.

- cheese

- lime tortilla strips (found by the croutons)

we started with the tortilla, then put some rice, then the meat, dressing, lettuce, cheese and then topped it off with the strips!

of coarse you can add whatever you would like but this is what we used!

cameron gave it a 9 out of 10!
which is AMAZING!
i felt like a queen all night when he told me that hahaha.
he has only given one thing his whole life a 10 and that is his moms egg rolls.
